Discover Korean Food 122: Dr. Sook-Ja Yoon’s “Gooksu Jangguk”


(Ingredients & Quantity)
300g Fine Noodles, 2kg (10cups) Water, 200g (1cup) Water
150g (½) Young Pumpkin, 1g (¼tsp) Salt
60g (1) Egg, 0.1g Sliced Chilli, 13g(1tbsp) Vegetable Oil
18g (1) Soy Sauce, 6g (½tbsp) Salt
Beef Broth: 200g Beef, 24kg (12cups) Water
Aroma Vegetable: 40g Spring Onion, 20g Garlic

1. Boil the Beef for 12 minutes at high temperature; 40 minutes at medium temperature; 20 minutes at low temperature with the Aroma Vegetable. Cut the beef into 4cm long, 1cm wide, and 0.3cm thick. Make the Beef Broth.
2. Cut the Young Pumpkin into 5cm long and 0.4cm thick. Chop them into 0.3cm wide. Boil them down for 10 minutes with salt.
3. Fry the Egg. Cut it into 4cm long and 0.2cm thick.
4. Cut the Sliced Chilli into 1 cm long.

1. Fan-fry the Young Pumpkin for 30 seconds at medium temperature.
2. Boil the water for 9 minutes at high temperature. Add the Fine Noodles. After a minute, pour 100g (½) of water and boil them for a minute. Pour 100g (½) of water and boil them for 30 seconds.
3. Drain the Fine Noodles.
4. Pour the Beef Broth. Boil them for a 5 minutes with the Beef, Young Pumpkin, Egg, and Sliced Chilli.

* You can add a dried laver.
* You can pour the hot broth over the noodles a little at a time to heat them up.
