Discover Korean Food 137: Dr. Sook-Ja Yoon’s “Young-Ji-Auk-Juk”
Young-Ji-Auk-Juk is a non-glutinous rice porridge mixed with a Mallow and Ganoderma lucid. Ganoderma lucid is good for sight and memory.
[Ingredients & Quantity]
* ¾ cups non-glutinous rice
* 4g Ganoderma lucid, 8 cups water
* 75g mallow, 5 cups water
* 100g shrimp, 1 tsp salt
[Recipe]
1. Soak the rice in water for 2 hours.
2. Boil the Ganoderma lucid for 10 minutes at high temperature; for 30 minutes at medium temperature; for 30 minutes at low temperature. Drain.
3. Wash the Mellow. Blanch it for 2 minutes in salt water. Cut it into 1 cm long.
4. Trim the shrimps. Cut them into 1 cm lengths.
5. Boil the rice. Add the Ganoderma lucid water. Add the Mellow. Boil them for 25 minutes at medium temperature.
6. Add the Shrimps. Boil them for 3 minutes. Season it with salt. Boil them for 2 more minutes.
[Tips]
* You can use the mellow without blanching it.
* You can use dried shrimps.
* You can use spinach instead of mellow.
