Discover Korean Food 61: Dr. Sook-Ja Yoon’s “San-Yak-Galbi-Zim”

San-Yak-Galbi-Zim is a steamed beef rib dish mixed with Dioscorea batatas, various vegetables, and a sauce. It helps boost the stamina. Moreover, it is good for high blood pressure, stroke, obesity, and diabetes.

[Ingredients]
600g beef ribs, 4cups water
300g Dioscorea batatas, 3 shiitake, 100g carrot, 8 ginkgo nut
4cups water
Seasoning sauce: 3tbsp soy sauce, 1 and 1/2tbsp sugar, 1 and 1/2tsp honey, 1 and 1/2tbsp minced spring onions, 1tbsp minced garlic, 1tbsp sesame powder, 1/8tsp pepper powder, 1 and 1/2tsp refined rice wine, 1 and ½ tbsp sesame oil

[Recipe]
1. Cut the beef in 5cm length. Remove the fat. Soak in water for 3 hours. Scald them in hot water. Rinse them in cold water.
2. Boil the beef. Leave them for 20 minutes at medium temperature. Take out the beef. Strain the water.
3. Peel the Dioscorea batatas and carrot. Cut them in 4cm2. Trim the edges.
4. Soak the shiitakes in warm water for 1 hour. Remove the pillars. Divide them into 4 pieces.
5. Fry the ginkgo nuts and remove the inside skin.
6. Trim the dates
7. Put the half amount of beef and sauce into the pot. Leave them for 10 minutes. Pour the beef water. Boil them for 3 minutes. Boil them for 20 minutes at medium temperature.
8. Add the rest of beef and sauce with the shiitakes. Boil them for 12 minutes. Add the Dioscorea batatas and carrot. Boil them for 7 minutes. Add the ginkgo nuts and dates. Boil them for 3 minutes.
9. Add sesame oil and mix them.

[Tip]
* For better colour, Dress the sauce after the meat has been cooked.
